Abstract

This research aims to study different levels of acetic acid in the formulation of a government liquid for the conservation of the Cabuya flower (Agave americana), which is a plant that grows in arid places of the Andean region. A concentration of 30% of acetic acid obtained a better parameter of acceptability; considering the passage of shelf life, the pH levels decrease, and the acidity levels increase. In conclusion, the defined concentration obtains the best score by tasters.
