Physical, chemical, and microbiological evaluation of a preserved Black Cabuya Flower (Agave americana) with different levels of acetic acid in the covering liquid

Abstract

This research aims to study different levels of acetic acid in the formulation of a government liquid for the conservation of the Cabuya flower (Agave americana), which is a plant that grows in arid places of the Andean region. A concentration of 30% of acetic acid obtained a better parameter of acceptability; considering the passage of shelf life, the pH levels decrease, and the acidity levels increase. In conclusion, the defined concentration obtains the best score by tasters.
